Caves to Consider

Sea Lion Caves - Kind of touristy, not a hike, just an elevator down into a sea cave. On the Oregon Coast near Florence.

Ape Cave - In Gifford Pinchot National Forest, south of Mt. St. Helens, WA. Looks look a cool (self-guided) hike though the cave.

Oregon Caves National Monument - In southern Oregon. Huge cave system, guided tour (Sami and I went on it before and it was very cool).

Lava River Cave - in central Oregon in the Newberry National Volcanic Monument area, it's longer and older than Ape Cave. We haven't been to this area, but our friend Eric loves the Newberry Caldera. On a clear day, you can see both Washington and California from the top.
